Ingredients
  

  • 4 cod fillets, about 6 ounces each
  • 1/4 cup unsalted butter melted Substitute: Olive oil or ghee for a dairy-free version.
  • 1/4 cup fresh lime juice about 2-3 limes
  • 2 tablespoons fish sauce
  • 2 tablespoons honey or maple syrup for vegan sweetness
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 1/2 teaspoon red pepper flakes adjust to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions
 

Preheat and Prep

  • Preheat your oven to 400°F (200°C). Line a baking dish with parchment paper or lightly grease it with oil.
  • Tip: This prevents the fish from sticking and makes cleanup easier.

Make the Sauce

  • In a small bowl, whisk together the melted butter, lime juice, fish sauce, honey, garlic, ginger, and red pepper flakes.
  • Tip: Taste the sauce before pouring it over the fish to adjust sweetness or acidity to your preference.

Arrange the Cod

  • Place the cod fillets in the prepared baking dish in a single layer. Pour the lime butter sauce evenly over the fish.

  • Bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.

Notes

  • No Fish Sauce? Use soy sauce or tamari with a splash of lime juice for a similar salty depth.
  • Want it Creamier? Add a tablespoon of coconut milk to the sauce for a richer texture.
  • No Cod? Try halibut, tilapia, or even salmon. Just adjust the cook time for thicker fish.
