- 4 cod fillets, about 6 ounces each
- 1/4 cup unsalted butter melted Substitute: Olive oil or ghee for a dairy-free version.
- 1/4 cup fresh lime juice about 2-3 limes
- 2 tablespoons fish sauce
- 2 tablespoons honey or maple syrup for vegan sweetness
- 2 cloves garlic minced
- 1 teaspoon fresh ginger grated
- 1/2 teaspoon red pepper flakes adjust to taste
- Fresh cilantro for garnish
- Lime wedges for serving
Make the Sauce
In a small bowl, whisk together the melted butter, lime juice, fish sauce, honey, garlic, ginger, and red pepper flakes.
Tip: Taste the sauce before pouring it over the fish to adjust sweetness or acidity to your preference.
Arrange the Cod
Place the cod fillets in the prepared baking dish in a single layer. Pour the lime butter sauce evenly over the fish.
Tip: Let the fillets marinate in the sauce for 10 minutes if you have time—this deepens the flavor.
Bake
Bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
Tip: Thinner fillets may cook in closer to 10 minutes, so keep an eye on them to avoid overcooking.
-
No Fish Sauce? Use soy sauce or tamari with a splash of lime juice for a similar salty depth.
-
Want it Creamier? Add a tablespoon of coconut milk to the sauce for a richer texture.
-
No Cod? Try halibut, tilapia, or even salmon. Just adjust the cook time for thicker fish.
-
Avoid Overbaking: Cod becomes dry quickly if overcooked. It should just start to flake when done.
