Ingredients

  • 1 ½ cups old-fashioned oats – Provides fiber and a hearty texture.
  • ¾ cup peanut butter – The creamy binder that holds everything together.
  • ½ cup honey – Naturally sweetens and adds moisture.
  • 1 teaspoon vanilla extract – Enhances flavor.
  • ¼ teaspoon salt – Balances sweetness.
  • ½ cup mini chocolate chips – Adds a rich chocolatey bite.
  • ½ cup mini M&M’s – Brings color and extra crunch.

Instructions

1️⃣ Mix the Base Ingredients

  • In a large mixing bowl, combine the oats, peanut butter, honey, vanilla extract, and salt.
  • Stir until everything is well combined and evenly coated.

2️⃣ Add the Mix-Ins

  • Gently fold in the mini chocolate chips and mini M&M’s until evenly distributed.

3️⃣ Form the Cookie Balls

  • Use a cookie scoop or your hands to shape the mixture into bite-sized balls (about 1-inch in diameter).
  • Place them on a lined baking sheet to prevent sticking.

4️⃣ Chill to Set

  • Refrigerate for at least 30 minutes to allow the cookie balls to firm up.
  • Once set, transfer them to an airtight container for storage.

5️⃣ Enjoy!

  • Grab one (or two!) whenever you need a quick energy boost or a sweet snack!

Notes

Use Natural Peanut Butter – For a healthier version, use unsweetened peanut butter with no added oils.
Make it Nut-Free – Swap peanut butter for sunflower seed butter or almond butter for an allergy-friendly option.
Extra Nutrition Boost – Add 1 tablespoon flaxseeds, chia seeds, or protein powder for added health benefits.
Change the Sweetener – Use maple syrup or agave nectar instead of honey for a vegan alternative.
More Crunch? – Stir in crushed pretzels or chopped nuts for extra texture.
