Ingredients
  

  • 2 large cucumbers sliced
  • 4 medium tomatoes chopped
  • 1 medium white onion thinly sliced
  • 1/2 cup white vinegar
  • 1/4 cup olive oil
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 tablespoon fresh parsley chopped (optional)

Instructions
 

  • Combine cucumbers, tomatoes, and onions in a large mixing bowl.
  • In a separate bowl, whisk vinegar, oil, sugar, salt, pepper, and garlic powder until dissolved.
  • Pour marinade over vegetables and toss to coat thoroughly.
  • Cover and refrigerate for at least 2 hours or overnight.
