For the French Toast Bites:
- 1 loaf brioche or Texas toast bread cut into bite-sized cubes
- 4 large eggs
- 1 cup whole milk
- 1/4 cup heavy cream
- 1 tbsp granulated sugar
- 1 tbsp brown sugar
- 1 tbsp ground cinnamon
- 1 tsp vanilla extract
- 2 tbsp unsalted butter for cooking
For the Glaze:
- 1 cup powdered sugar
- 2 tbsp milk
- 1/2 tsp vanilla extract
Optional Toppings:
- Extra cinnamon sugar
- Chopped pecans or walnuts
- Fresh berries
- Whipped cream or maple syrup
Prep Bread: Cut bread into bite-sized cubes. If fresh, dry slightly in a 300°F oven for 8–10 minutes.
Make Custard: Whisk eggs, milk, cream, sugars, cinnamon, and vanilla until smooth.
Soak Bread: Gently coat bread cubes in the custard mixture. Let soak for 5–10 minutes.
Cook: Heat butter in a skillet over medium heat. Cook soaked cubes in batches until golden on all sides (5–7 mins).
Make Glaze: Whisk powdered sugar, milk, and vanilla until smooth.
