These Cinnamon Roll French Toast Bites combine the best of cinnamon rolls and French toast in one delightful, bite-sized treat. Easy to make, glazed with vanilla sweetness, and perfect for breakfast, brunch, or snacking.

Ingredients
  

For the French Toast Bites:

  • 1 loaf brioche or Texas toast bread cut into bite-sized cubes
  • 4 large eggs
  • 1 cup whole milk
  • 1/4 cup heavy cream
  • 1 tbsp granulated sugar
  • 1 tbsp brown sugar
  • 1 tbsp ground cinnamon
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter for cooking

For the Glaze:

  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla extract

Optional Toppings:

  • Extra cinnamon sugar
  • Chopped pecans or walnuts
  • Fresh berries
  • Whipped cream or maple syrup

Instructions
 

  • Prep Bread: Cut bread into bite-sized cubes. If fresh, dry slightly in a 300°F oven for 8–10 minutes.
  • Make Custard: Whisk eggs, milk, cream, sugars, cinnamon, and vanilla until smooth.
  • Soak Bread: Gently coat bread cubes in the custard mixture. Let soak for 5–10 minutes.
  • Cook: Heat butter in a skillet over medium heat. Cook soaked cubes in batches until golden on all sides (5–7 mins).
  • Make Glaze: Whisk powdered sugar, milk, and vanilla until smooth.
  • Serve: Drizzle glaze over warm bites. Add optional toppings and enjoy!
